1 kg beef for stewing
5 cm piece of fresh ginger
2 spring onions
3 T peanut oil
6 T chili bean paste
1 litre beef/game stock
4 T Shaoxing ricewine
2 t dark soy sauce
2 t whole Sichuan pepper
1 star anise
1 cao guo (optional, I didn’t use it this time)
salt, to taste
Blanch the beef in boiling water for a minute or two until scum has risen to the surface, then remove the meat and rinse it under the tap. Cut the beef into 3-4 cm chunks. Crush the ginger slightly. Cut the spring onions into 2 or 3 sections.
Heat the oil in a flat-bottomed saucepan over a medium heat. When it is hot, add the chili bean paste and stir-fry for about 30 seconds until the oil is red and richly fragrant. Add the stock, the beef, the wine, the ginger, the spring onions, the soy sauce, and the spices. Bring the liquid to the boil, skim if necessary, then turn the heat down and simmer gently until the beef is beautifully tender. This will depend on which cut of beef you are using, but it should be at least 2 hours. (if using a crockpot, longer)
Liked it better than the first time I made this. And I was right then, it is better with mashed potatoes.

1 kg succade-beef (=stewing beef from the shoulder)
5 cm piece of fresh ginger
1 shallot
1 T peanut oil
6 T chili bean paste
1 litre beef/game stock
4 T Shaoxing ricewine
2 t light soy sauce
2 t whole Sichuan pepper
1 star anise
salt, to taste, but be carefull, this dish can easily get oversalted!
Heat the oil in a "normal cooking pot" with a thick bottom over a medium heat. When the oil is hot, add the chili bean paste and stir-fry for about 30 seconds until the oil is red and richly fragrant. Add the stock, the beef (uncut this time), ricewine, ginger, shallot, soy sauce and spices. Bring the liquid to the boil, skim if necessary, then turn the heat down and simmer gently until the beef is beautifully tender.
I used the crockpot, 4 hours on high, then 13 hours on low! I have to admit, I forgot all about them, but I can tell you I will do it again next time. They were perfect. The fat line in the middle, that resembles succade was totally dissolved, like soft jelly.
Leave them in the fridge for at least a day. Reheat, strain the stock/sauce, reduce and thicken with some cornstarch. Serve with mash potatoes and green beans. Perfect fusion if I say so myself.
And not even really that spicy/hot as you would expect with 6 tablespoonsfull of chilibeansauce.

Giving the luxury option a go, and what a go’er it was!
Tender, soft and very tasty. Packed full of beef flavour.
I left the skirt of fat on to let it baste itself, and I smeared on a paste of rosemary, garlic, black pepper, salt and olive oil. It then went onto the barbecue at full bore for a minute or so, then back down to the lowest flame for about 4 minutes, and the same with the other side, with a wok lid to cook it though. Then I rested it for another 5-10 minutes on the cool side of the barbecue. This resulted in a great piece of meat that was … overcooked
Well, it was medium well in some places and medium rare close to the bone.
We also had a few links of the well fermented chorizo sausages from Casa Iberico and some tofu steaks.
